Tea Brack with William

Ballydaly man William O’Regan was on RTÉ TV yesterday on the Today with Maura and Daithi, where he was making a tea brack, from a recipe he got from his mother.

Recipe:

Soak 350g of fruit in 1/2 pint of tea overnight.
Mix 1 beaten egg with 125g of golden caster sugar.
225 plain flour.
1 spoon of mixed spice nutmeg.
Mix 350g of fruit.
Brush with honey when baked.

Place fruit and tea in bowl and leave to soak overnight.
Add 125g of caster sugar, 1 beaten egg,225g of plain flour and mixed spice and mix well.
Transfer to a greased and base lined loaf tin.
Bake in a preheated oven 180°C for approx 45 mins to 1 hour or until risen and firm to the touch.
Cool on a wire tray.
