It wouldn’t be me without doing something with a twist for Christmas. There are many entertaining occasions over the festive season and of course, the big Christmas dinner. Many people want to keep the ham, turkey etc just for the day and do something different for Christmas eve or another special evening.
Or like me, you’re not that fussed about a turkey. You might think it’s a bit of a dry old bird (not the way I make it off course!) or it is just too big for your size family. Growing up in South Africa many families enjoy lamb, duck or goose on Christmas day instead of turkey.
With that in mind, I have prepared my famous Venison With Chocolate Chilli Sauce. Venison is a very luxurious meat that makes the perfect gourmet centrepiece to your festive dinner table. Some people might be put off by venison, thinking it is too ‘gamey’, but this is not so. I get Irish venison from Millstreet Country Park in Cork. To describe the taste and texture, it is like the most tender, most flavoursome piece of steak you’ve ever had. I season it well with thyme and garlic, seal it in a hot pan then roast it like a beef roast. The Chocolate Chilli Sauce is very typical of South America and goes very well with venison. The sauce is made with a red wine reduction, spices, a little chilli and finished off with some dark chocolate to extra silkiness and depth of flavour.
